Since I've been in a domestic mood lately, I'm going to start posting a Recipe of the Week. At least for the forseeable future. Until I get bored with the idea.
This is The Recipe everyone asks me to make. I've posted it here before, but given its special status, it deserves another mention. Chicken Riggies are very much a regional dish. Utica, NY is famous for its Riggies. Each year, the YWCA holds a RiggieFest and if I have my facts correctly, there are usually around 100 entries. Everyone makes their riggies differently, but they all have chicken, rigatoni, peppers and some spicy pink (almost like a vodka sauce) sauce. It's an exceptionally good mid-winter meal; heavy and spicy to warm you from the inside. It's also very fatty, but we won't pay attention to that.
This recipe was given to me by my former secretary, Miss Sheri B.

This weekend was rather low-key. I did thigns like mow the lawn and tidy up the house.
On Sunday mornings, the group I run with over lunch usually meets for a Sunday morning run. I generally don't meet them, since they usually meet somewhere near my office and my office is about 1/2 hour from my house. But this Sunday, they wanted to run the fitness trails at the college (the college in my town, not the college I work for) and since those trails are about five seconds from my humble abode, I agree to meet them.
I should have know better. The people that meet at the hard-core runners of the group. I'm just a mid-range, mid-pace runner. I thought we'd go for a nice and easy 30 minute run through the woods. So, I brought Daisy.
Um, ouch. We went for an hour and a half. At what I consider to be a borderline-blistering pace. The first 45 mins we had to go uphill. At first, Daisy was "OMG THIS IS SO MUCH FUN!!!!!!!!!!!!!!!!" but by the time we hit one hour she was all "Dude, mom, you don't look so hot, you should think about walking for a while." (In case you were worried, she was just fine. I was the one about to vomit.)
I ended up spending yesterday afternoon on the couch. I was almost too tired to root for the Bears [who suck so badly this year its almost too painful to watch anyway]. That all said, I feel terribly accomplished! Why? Because, after three years of trying to find out what it would take to get the dog so tired she nearly collapes, I have my answer! This was her post-run:

TGFF -- That's THANK GOD FOR FOOTBALL, obviously.
I'm quite tired, having stayed up way past my bedtime to watch three quarters of the game. *big fat happy sigh* I'll lose, likely in fantasy football this weekend, but at least Peyton's and Reggie's show last night will mean we go down fighting. *another big fat happy sigh*
Also, there's beer -- five cans to be exact -- sitting on the counter in the community kitchen. Food or beverages that sit on the counter in the ktichen are, usually, free for the taking. I'm wondering who will be brave (or dumb) enough to take the first can.Current Mood: tired

Our annual fantasy football draft is coming up...and that means we have GOT to get the house clean.
We live in a ranch and so normally when people come over, I clean the main floor and quietly close the door to the basement. The basement is finished and has a mish-mosh of hand-me-down furniture. It's not pretty, but it is a nice, comfortable place to throw a bunch of drunken boys while they do their fantasy picks. So, it needs to be cleaned. Badly. It is currently inhabited by four cats and, darn it, they don't clean up after themselves.
Also, the basement has two bedrooms. We don't use them and they aren't painted or decorated, but we only have two guest bedrooms upstairs and eight people coming, so we are going to try and fix up the bedrooms downstairs too. Has anyone used those peel-and-stick carpet squares and if so, are they worth it?
So, that's our weekend. Cleaning. Maybe some quick painting. Exciting, uh? Current Mood: bored

Looks like he re-injured the tendon again. We don't know for sure. It's all a repeat of last year -- there's no structural injury; no fracture or other bone issue. Nothing that can be detected on an X-ray. If I want a definitive answer, I'll need a MRI. I'm in talks with the insurance agency (a new one) to see if they'd cover it. But I'm not holding my breath.
Anyway, so it's back to stall rest and then rehab again. Umphf. Dr. S said it'll likely be another 6 months before we are back to where we were...but that without an MRI, he can't tell me if Freddie is done jumping forever...or if this is just really craptastic luck.

1. If you could have a superpower, what would it be? Invisibility.
2. Which is more attractive to you: physical appearance or personality? Personality (if evidence is needed, take one look at my husband's mullet)
3. Who did you last fight with? The guy I married.
4. What did you eat last night? Some pita chips.
5. Who are you mad about? Mad about? Uh. I can't come up with a witty answer, so I'll be boring and say my hubby.
**** Very nervous about tomorrow's show. Which is silly, because, hello!! I choose to do this!

- BOO -- I dropped Daisy's crate, food, and $100 worth of new toys off at her grandfather's house last night. Grandfather proceeded to bitch and moan about the amount of toys, how spoiled she is, and how she's going to be a "pain right in [his] ass!!"
- YEAH -- He then winked at me and said how excited he was to have a dog in the house again, albeit temporarily.
- BOO -- The College has implemented it's new Avian Flu policy and the decision was that if there is one human-to-human transmission in the continental US, the College will immediately close it's doors for three months.
- Even bigger BOO -- I'll only get paid for one of those three months.
- BOO -- In a shocking surprise, I did not win the Mega Millions Jackpot last night.
- YEAH (???) -- I did get one number right...that was almost fun.
- BOO -- I had an appointment scheduled with the midwife tomorrow and she cancelled on me. This stinks because I had some not-so-pressing-in-the-grand-scheme-of-things-but-pressing-in-my-little-world issues to discuss with her. Even worse, she can't get me in until APRIL. AND the PA I regularly see has decided to extend her paretnal leave through most of this year.
- YEAH -- Dr. Heather, the family doc who, as a favor to my husband, takes my calls even though she's never seen me said she could help with one of my issues (I think I have, um, a flora imbalance going on down there, as things are very much inflamed and can I tell you how uncomfortable it is to ride a horse with a swollen perineum? Ok, a bit TMI. Apologies). But, she is making me come in for an actual exam. Umphf. I like this over-the-phone relationship thing we've got going on.
- YEAH, YEAH, YEAH!!! -- One week from today I leave for New Zealand!

- Freddie seems not to be bothered in the slightest by his missing tail. We had a nice ride last night.
- Mike's sort-of-uncle (his aunt's third husband) has been diagnosed with pancreatic cancer and was told he had any where from two years to two weeks left. Not surprising, given that he has had three strokes, smokes like a chimney, and drinks like a fish. Still, Mike's aunt is very sad and is, quite frankly, getting tired of this burying-your-husbands thing.
- Oh my god I have so much to do before we leave for New Zealand.
- My credit card balances some how got a bit high and I have no idea how. Must work on paying those off.
- Shelly is back on my ass again about how this is the year to sell Freddie and get something a little more challenging. I'm now trying to figure out if I can somehow co-own a horse with a friend, because yeah right am I going to sell Fred.
- We now have, after two and a half years, reached a point where the cats aren't terrified by the dog. Which means that they are out prowling around and trying to snag some real estate on a lap. When the cats crawl into our laps, the dog get insanely jealous and come over to sniff the cat in question. Which leads to a massive kitty-dog fight. I think I liked it better when they were too afraid of confrontation.
- Hospice is recommending that Granny be moved to a different facility that will stimulate her more and provide more supervision. Oddly, it is cheaper than her current posh pad. Mom and one of my aunts toured it and are in love with it.
- Did I mention how much I have to do before New Zealand?

| » One hell of a Monday morning. |
Currently, I am trying: *to pretend like I never watched that football game last night. *to get my eye to stop twitching already! *to do something, anything, to get rid of this headache. *to remember what the hell it was I was suppose to talk about at my lunch meeting. *to keep warm. *to figure out if I have the time and money to get to Missouri by week's end for the funeral of my former roommate's father.
I so should have called in this morning.

- Had my first honest-to-gosh jumping lesson last night. We were trying to take it easy and do low jumps and Fred still decided that he had to jump the itty things like they were three feet high. Shelly called him a perfectionist. *snicker*
- Did I mention I chopped my hair this weekend? Well, it was a chop for me, anyway. About five inches or so. It falls just above my shoulders. I'm not crazy about it, but it was looking dead and needed a fresh start, so I can have nice long and shiny hair for summer. Yeah, I'll get around to posting pics.
- The Mary Jane thread on CC is absolutely cracking my ass up.
- I'm helping some of the girls at the barn do a science fair project on horses this weekend. We are using some of Temple Grandin's theories and testing horsey intelligence. Mike says I shouldn't be involved because if Fred comes out being on of the stupid ones, I'll be devastated. Hee.

You guys. We've put over 4,000 miles on my was-once-a-brand-new truck in less than one week. I'm flippin' exhausted. Back and forth to Mike's parents. Back and forth to my parents.
And now? We about to leave to go to Saratoga Springs to celebrate NYE with some friends. I'm begging Mike to stay home because the thought of getting in that car makes me want to cry...but we haven't seen these guys in a long time. So. Umphf.
I'll try and catch up soon, as I'm seeing some alarning news here and there...but I hope you all had a safe and happy holidays...and have a fantastic New Year's.

| » MOTD |
So. I know you all are just dying to hear the latest update about my horse. I won't make you wait any longer. :-P
I had my first lesson since May yesterday! Sure, it wasn't a hard lesson and it was just kinda your basic stuff, but still. We're almost, kinda, sort back! After wards, I tried a bunch of lead changes with him (smile and pretend like you know what I mean) and he DID IT!!! He totally rocked it and had no limp after the fact. I'm tempted to try and jump him over a ground pole next week.
*giggles with excitement*
Now, in response to someone's *cough*Phart*cough* disappointment that not many people participated in yesterday's MOTD (Mission of the Day) (that is, to post the latest pic taken of you or some such thing), I feel the need to remind someone that some people WOH and therefore do not have access to their cameras during work hours and that some people use their work computer as their primary computer so those people might be completing their MOTD today.
That said, I give you my MOTD pic, along with a few bad shots of Daisy in her new, slightly small sweater:

What would be considered "in" this fall? Long hair? Or short hair? I'm wondering if I should do a choppity-chop this Saturday...

Decided to stay home today and spend time with mom and dad. Which is great, because otherwise I would have missed the cake that we just had...the cake they bought to celebrate that their Jeep just "turned" 31,000. Because every normal family does stuff like that, right?

Where can I buy DVDs? Specifically, DVDs of older cartoons (i.e., Peanuts)?
My brother asked for two DVDs for his birthday (in April). I found them on Amazon and ordered them so they'd be delivered on or around his birthday (April 24th). In May I received an e-mail that there was "a delay" and he wouldn't get them until June 7th. On June 7th I received an e-mail that there was "a delay" and he wouldn't get them until July 17th. I just received another e-mail which explains there is yet another delay and he won't receive them until September 24th.
I've checked Blockbuster, Circuit City, ebay and Best Buy -- none carry the two Peanuts DVDs he wants.

1. How many foreign countries have you visited? Not many, and I'm very much embarrassed by it. Canada, Mexico, the Bahamas, and St. Martin (Marteen?), I can't remember what country they are a providence of. I think its 1/2 of the island is Dutch, the other 1/2 is French. I believe we were on the French side.
2. What do you always take with you on vacation? Hee. My BCPs.
3. Name something you've lost recently: The one pair of shorts that actually fit around my toosh!
4. Do you prefer action-packed vacations or relaxing ones? Relaxing ones. Leave me on a beach with a book and a fruity drink and I'm one happy duck.
5. Other people's vacation photographs: do you really want to see them? Absolutely!
